Feeling "Full" of Thanks


I just finished eating Thanksgiving 2.0, leftovers from yesterdays yummy dinner. We spent this Thanksgiving with our second family the Kroghs. Debbie and Steve came up from San Clemente, Kyle from Beverly Hills, and Chad and Todd from Utah. The feast was held at Spencer and Amanda's house because our place isn't big enough for everyone. We divided up who would bring what. Nathan made the 22 lbs turkey.

He brined it over night in a bucket of broth and seasoning, and he popped it in the oven early in the morning. Due to the brine, no basting was required and our oven is so great it cooked much faster than we anticipated-- very hassle free. It was super moist too. I love that he cooks!

Nathan also made his stuffing--a favorite among the group. It is his great-grandma's old recipe, and I look froward to it every year. I opted to make sea-salt, buttermilk mashed potatoes, gravy (made from the turkey drippings) and the green bean casserole. There was also sweet potatoes, rolls and cranberries. Dessert consisted of pumpkin, apple and chocolate pie. It was all so delicious!

By the end of the night I was so full it was hard to move.

There are a lot of things I am thankful for, but this year I am particularly thankful that I am pregnant and that little Hudson will be here soon.
